Our all time favorite (and easy) way to roast a whole chicken is "Beer-Can Chicken" Style - Season the bird with your favorite seasonings, Take a can, half full of your favorite "liquid"and/or flavours, put it up the "butt" of the chicken, and roast at 350, either in your oven on convection or indirect heat on your BBQ - 45 min for a 4lb chicken or up to 2 hours for a 8 lb bird - Put a tray underneath to catch the drippings. The dry heat crisps the skin and lock the steam inside - SOOO moist and juicy!
